Lastly, and probably most importantly, they’re delicious, proving once and for all that eating well as a college student doesn’t have to cost an arm and a leg or require a degree in culinary excellence. After all, nothing beats being able to throw some leftover food on a plate, toss it in the microwave, and start in on a study session.

The good news is that this recipe is so easy to make the first time around that you’re sure to love it because the whole thing will be done in around a half hour. One thing to note is that this recipe is specifically tailored to suit a “clean eating” lifestyle and it calls for things like grass fed butter; if you’re on a budget, disregard any of the things that are going to be more expensive and opt for their generic counterparts instead. Additionally, when the recipe calls for fresh ingredients you can swap those out for the bottled variety and it will be just as good.

All you have to do for this recipe is heat some butter and garlic, throw in some slice onions, add your chicken breasts, and let it cook for awhile. Next, add a cup of white rice and chicken broth, lemon juice, and your spices. From there, all you have to do is let it simmer together for about half an hour. Once it’s all done, serve it up and enjoy!

Muffin-Pan Shepherd’s Pie

The Kitchn is a great source for recipes, but this Muffin-Pan Shepherd’s Pie is easily one of their best. They’re quick and easy too, because they take advantage of frozen hash browns for the potatoes, saving you a bit of time doing prep.

All you need is a muffin pan, hash browns, vegetable oil, ground beef, onion, flour, beef stock, veggies, and a few seasonings and spices that you very likely already have in your pantry. The whole meal comes together relatively quickly and easily and the end result is just downright comforting.

Every so often a student just needs some good old fashioned comfort food because it really does help to get through some of the challenges that school will inevitably throw your way. With this recipe in your arsenal you’ll be well prepared when it happens. It doesn’t get much better than that!
